This is a wine whose flaxen color tinged with green highlight leads to aromas of lime zest and flavors of ripe pear. A medium bodied white made with great precision.

The Château Saint-Roch is located in the heart of Roussillon, South of France, close to the Spanish border. Halfway between the Pyrenees and the Mediterranean sea, the Queribus Cathar castle, set on a steep cliff, overlooks the valley and the mosaic of our vineyard.

High Environmental Value level 3 vineyard. Sustainable, low-impact farming. Bush vines, dry grown. Yield: 40 hl/ha. 

First selection as the bunches are cut, and second sorting of grapes at the cellar door. Cold maceration. The alcoholic fermentation is kept at 61°F to maximize the fruit expression.

Bottling in December.
