Tasting Selections (Friday & Saturday):
Alcohol:12% vol.
Area of Production:Region: Veneto. Morenic hills to the south of Lake Garda.
Grapes:From white grapes Trebbiano Toscano (30%), Tocai Friulano (15%), Garganega (25%), Malvasia (15%) and Cortese (15%), separately vinified. System of growing: traditional with espalier.
Soil Composition:Grounds of morainic origin, with typical drifts with stones.
Vinification and Production System:Vinification of the single grapes, short maceration with the skins, immediate separation of the must, fermentation in purity at controlled temperature (15-16°C.), union of the results of the vinification of the single grapes, preservation in thermoconditioned inox tanks, cold bottling in sterile bottling line.
Organoleptic Description:Dry and mellow white wine, fruity and fragrant; complex perfumed nose.
Color:Light straw-yellow.
Bouquet:Typical, intense, aromatic, fresh fruit aroma.
Taste:Mellow, delicate, naturally sparkling.
Serving Temperature:To be served cold at 8-10°C.
Preservation:To be drunk young. Store in a fresh, dry and dark place.
Gastronomic Suggestions:Wine for aperitif, goes perfectly with hors d'oeuvre, first courses, fish and white meats.

Pale yellow color.
Dominant peach aromas with a hint of pineapple juice on the nose.
The palate has intense peach and pineapple characters.
The mid palate is soft and creamy.
Vinification Notes:
Crushed, de-stemmed and then pressed using a membrane press.
The ferment was kept slow and cool to retain all the natural flavors and aromatic qualities.
The juice was fermented in stainless steel tanks at a cool temperature to retain all the natural flavors and aromatic qualities.
The wine was blended, clarified, filtered and then bottled soon afterwards so the wine was a true expression of the grape/terroir from which it was made.

Appellation: Indication Géographique Protégée Pays D’Oc
Soil: The Domain is located in the heart of an abundant «garrigue» nearby the Mediterranean shore. The soils are mainly limestone with some sandstone, red clay and shale. Mediterranean climate with strong sea influence.
Grapes: Organic Syrah and Mourvèdre.
Harvest: Mechanical harvest.
Yield: 40 hl/ha
Vinification: Direct pressing and low temperature fermentation in stainless steel tank. Maturation on the lees.
Alcohol: 12,5 %
Tasting: This blend of Syrah and Mourvèdre rosé, light and round, presents aromas of roses, red fruits, and strawberry candy. Ideal for an aperitif, or to serve with charcuterie or grilled meats.
Serve at 10/12°C.

Fermentation at 28/30 20/30 days remaining macerated according varieties.
Tasting notes:
Color: Garnet - Purple, purple trim.
Aroma:ripe fruit, blackberry, plum, specks of vanilla, roasted, balsamic, personal and complex.
Palate: Ample, mineral, ripe, sweet, round and polished tannins, lingering finish
Pairing:Steak with mushrooms, hare, partridge, leg of suckling goat, lamb, smoked meats, stews and rice dishes with meat, fish such as hake casserole, salmon, cod and bluefin tuna, smoked eggplant parmesan, and blue cheese General cheeses.

Maceration: Once the vats are full, the grapes undergo a 5 to 6 days cold maceration before the alcoholic fermentation takes place. The whole maceration process takes 25 to 35 days
Malolactic Fermentation: 100%
Aging : 60% in French oak barrels during 11 months
Tasting Notes: Fragrant black cherries, exotic spices, and floral aromas lead to a plush, ripe, pleasure-bent wine.

Bonus Taste (VIP Friday Only):
Chateau Roumieu is a family-owned property passed down from generation to generation since the 18th century. The name “Roumieu” refers to an important stage along the ancient pilgrimage route of “Saint-Jacques de Compostelle”, or St. James’ Way, back in medieval times – when “Roumieu” was used by the Moors to describe the Christians. A scallop shell, adopted as the Chateau’s emblem, features on the label, as “Saint-Jacques” is the French word for scallop.
The Château is located on the calcareous-clay plateau of Haut-Barsac, on the same terroir as the most prestigious Cru wines of Sauternes, with Climens (1st cru) and Doisy-Védrines (2nd cru) both adjoining the property.
Over the years, the Craveia-Goyaud family has committed to protect the unique character of the terroir. The vines are managed to irreproachable standards, guided by a sustainable viticultural regime and restricted yields. In order to make the finest wine possible, the grapes at Château Roumieu are painstakingly picked by hand one by one, in successive sweeps through the vine rows, with sometimes as many as 3-6 sweeps per block, picking only the grapes 100% affected by botrytis.
The wine is then slowly vinified and matured in oak barrels for 18 months.
This Sauternes is remarkable for its very fine, complex bouquet with aromas of candied fruit, honey and acacia. On the palate, the wine reveals good structure and is wonderfully supple and fleshy.

Be sure to stop in and say farewell to Shay! We have really enjoyed having her as part of our family and will miss her during our future wine tastings. Shay's experience in the wine industry was a great help to all our guests, but we are going to miss her smiling face the most during our upcoming events. The good news is you can still see her at JZ's Taste of Georgia in Cartersville. Shay was so kind to drive a very long way to help us and now it's time that she gets to visit us from the other side of the bar.

Viticular Practices: At Bullers, we still use traditional methods to produce our Premium Muscats. The
grapes are handpicked at our non-irrigated vineyard. In the winery, the skins are gently pressed to extract flavor without unwanted tannins or bitterness. Maturation: We use a solera system of fractional blending in oak barrels. At the mature wine is drawn off for bottling it is replaced with wine from the new vintage. This ensures a consistent blend of the older material with the fresh new wine. Cellaring Recommendations: Fully matured when released and ready for immediate consumption.
Wine Makers Notes: Mid-reddish brown to amber at the rim. Aromatic raisiny/floral scents/hint of spirit.
Initial sweetness and raisiny flavours linger to reveal complex hints of honey and lemons. Some rancio character. Underlying structure of tannin and well-integrated spirit. Finish is long and the honeyed flavours return and linger.
