Appellation: Indication Géographique Protégée Pays D’Oc
Soil: The Domain is located in the heart of an abundant «garrigue» nearby the Mediterranean shore. The soils are mainly limestone with some sandstone,
red clay and shale. Mediterranean climate with strong sea influence.
Grapes: 100% Organic Viognier.
Harvest: Manual harvest. In small crates. Cool room to avoid oxidation.
Yield: 35 hl/ha
Vinification: Sorting table direct pressing with gas. Fermentation in stainless steel with temperature control
Alcohol: 12.5 %
Tasting: This fresh and fruity Viognier presents powerful aromas of white flesh fruits, citrus, and white flowers. Ideal for an aperitif, or to serve with a grilled fish dish, poultry, or Asian dish.
Serve at 10°C.

The Chardonnay of Manuel Manzaneque is noticed by its freshness, thanks to the height of its vines of 1080 meters, and to the excellent balance between the fruit and the wood.
It is one of the great white wines of Spain and was the first of all the Spanish Chardonnays to gain a medal in the world-wide contest of Chardonnays of Burgundy.
In order to elaborate it, we carry out the grape harvest at night, to collect the grape at very low temperatures and apply pelicular maceration for ten hours to extract the maximum of precursors of aromas and primary aromas (fruit and floral) present in the skin of the grape.
Fermentation takes place at 16 ºC in French barrels from the valleys of Allier and Tronçais, that is to say with extra fine grains, to respect the fruit to the maximum.
The grapes are cultivated for between 3 and 12 months, depending on the year, with daily battonage of the fine substances, that provides a greasy and buttery taste in the mouth.
It is very elegant and balanced.

Intense and deep ruby red color. Harmony and balance with oak is sought, this leaves in evidence characteristic notes of the strain on the nose, black fruits such as prunes, blueberries and flowers like violets; in the mouth roundness and balanced tannins.

Tasting Notes
A classic Bordeaux style blend, our Del Rio Claret is an elegant composition of 60% Merlot, 30% Cabernet Sauvignon, 5% Malbec and 5% Cabernet Franc. Complex and rich, with deep flavors of red raspberry and ripe strawberry flavors, with herbal elements of thyme and rosemary. Framed with toasty oak notes and balanced tannins that provide structure for this rich and elegant blend. Intricately designed for enjoyment now or to be cellared for aging.
Winemaking
Each of the four varietals comprising the Claret; Merlot, Cabernet Sauvignon, Malbec and Cabernet Franc are processed, fermented and barrel aged separately. Our Bordeaux wines are all barrel aged for 15 months in 95% French oak and 5% American oak, of which 30% is newoak. After barrel aging our winemaking team crafts the perfect blend,using the four grapes as building blocks to a complete a delicious masterpiece.
Vineyard
South facing, our Southern Oregon vineyard estate is located at the northern end of the Rogue Valley. With elevations ranging from 700 to 1800 feet, the primarily ancient volcanic and alluvial fan soils provide well drained, nutrient rich soils which are ideal for growing premium wine grapes.
Food Pairing
The Claret is the perfect partner for an elegant evening of rich food dishes. A delicious grilled steak or rack of lamb flavors will be accented by the smooth nature of the Claret. A fancy meal is not required for enjoyment with this soulful French tribute as it also pairs well with classic hard cheeses such as Parmesan, Romano, and vintage Gouda.

Processing:
Soft pressing. Fermented at a controlled temperature until it reaches the appropriate alcohol level. It is then filtered to remove the yeast and stop fermentation.
Characteristics:
A young wine that is slightly fruity and sweet. It is suitable for those who want to drink an additional glass of wine. Also suitable for those who want to enjoy a glass, but find it difficult to taste dry wines. It can accompany many meals and is excellent as an aperitif. Can be served chilled (47-50° F) or at room temperature.

The cradle of our mulled wine was at the Nuremberg Christkindl- markt. The famous market is visited every year by millions of people, and they never fail to be captivated by the glittering market stalls as they sample gingerbread, grilled Nuremberg sausages and our delicious hot mulled wine.
Its well-balanced blend of natural spices, which include blueberries, aniseed, cardamom, mace petals, cinnamon, nutmeg, cloves, orange and lemon peel, pimento and much more has made it the most popular mulled wine in Germany. We only use strong, dark red wine from the Montepulciano grape from Italy. Nuremberg mulled wine is under EU protection as a product of particular quality and excellence, which can only be manufactured in Nuremberg.
