Tasting Selections:
Pale with hints of green, clean and bright with fine, persistent bubbles. Rich in elegant aromas characteristic of the variety. Characteristic taste does not conform to the traditional perception of sparkling wine. Its high content in natural sugars produces a feeling of fullness in the mouth. The finish is persistent, sweet and very pleasant. Light due to its low alcohol content, smooth foam.

ORIGIN: one of the first wines produced by Cavazza, the name “Tredici” is a hymn to the Goddess of Fortune
APPELLATION: Vino Frizzante Bianco
GRAPE VARIETY: White grapes from the province of Vicenza
PRODUCTION AREA: Gambellara and the Colli Berici
SOIL TYPE: a medium texture soil

TIME OF HARVESTING: second half of September
PRIMARY FERMENTATION: fermentation without the skins for about 3 days in stainless steel tanks at a thermostatically controlled temperature of 18°C max/64.4°F.
SECONDARY FERMENTATION: Charmat method in autoclave for 1 month
ALCOHOL CONTENT: 11 % vol.
TOTAL ACIDITY: 5.7 g/L
TASTING NOTES: pale straw yellow color, delicate fruity nose, fresh and persistent on the palate.
SERVING TEMPERATURE: 6-8° C/42.8-46.4° F
SERVING SUGGESTIONS: ideal as an aperitif, it pairs well with most dishes throughout the meal, particularly with light fish courses.

This wine comes from Sangiovese grapes selected from Central Tuscany; Dogajolo Rosato is an elegant and structured product with fruity and vivacious floral aromas. These characteristics are the hallmark of a young innovative wine that is also easy to drink.
Vinification: the must obtained from pressing is cooled and left in contact with the skins for a short time. Fermentation takes place in stainless steel tanks at low temperatures using selected yeasts.
Finishing: It is bottled in early January after being racked off the lees following fermentation.
Color: pale pink with elegant bright fuchsia tones.
Bouquet: floral characteristics, particularly rose, myrtle and grape flowers; hints of fruity fragrances like apple, currants and sour cherry.
Flavor: broad and fresh with complex fruity aromas that end with a clean finish.
Alcohol: 12,5% by volume.
Serving temperature: 10-14°C, 50-57°F.
Gastronomy: excellent aperitif and hors d'oeuvre wine. Distinctive accompaniment for mild meats, peppered dishes and cheese, excellent companion to grilled fish.

Viticular Practices: Harvest by hand, in 20k plastic cartons, in order to prevent the grapes from breaking up or other damages. Harvest takes place March 15-20 every year. Fermentation is performed in large oak foudres, with repeated remontage and pissonier, in order to achieve softer tannins and great color. Malolactic fermentation is realized partly in steel tanks and the rest in French oak barrels. The wine then returns to the oak barrels, where they age for 8 months, in order to optimize clarification and develop a more pronounced color. Bottling takes place after a very light filtering process over natural earth, in order to filter out any impurities.
Deep purple in color, with a spicy aroma, plum, raisins, and dark cherry-like flavors. Tannins are soft, velvety, and sweet. Very elegant, full-bodied, and a long finish which shows off its splendor and richness.

Teroldego is the signature, indigenous red grape of the Trentino-Alto Adige. It’s famous for its deep color, soft fruit and ability to adapt successfully to both modern and traditional aesthetics. Concilio’s Teroldego – from the Braide subzone renowned for varietal – jumps out of the glass with an opaque crimson-purple color and delicious aromas of licorice, violets, blackberries, morel mushrooms and tar. Fleshy and generous, the wine caresses the palate with a deep kernel of licorice-tinged cassis and black cherry fruit accented by soft tannins, tar, and a kiss of oak. Sappy black cherry and blueberry fruit carry through to the wine’s long, lithe finish, which adds notes of leafy sous bois and salty minerals. Everyone who loves a juicy, characterful and food-versatile red wine must try this offering. Enjoy now and over the coming three years with roast pork loin, pan-seared pork chops, roast duck, potatoes au gratin and long-simmered beef stews.

About the area
South Africa's vineyards are mostly situated in the Western Cape near the coast. This is the southernmost region of the African continent, and
has a Mediterranean type climate and diverse soils perfectly suited to quality grape production.
Winemaking
Specially selected grapes were harvested, destemmed and inoculated with yeast. The wine was allowed to ferment until the desired sugar level
was reached and then fortified with natural wine spirits to stop the fermentation. The resulting wine was then matured in French oak barrels.
Maturation
8 - 10 years in a combination of 300 litre and 500 litre French oak barrels.
Varietals
Tinta Barocca + Cinsaut + Souzão.
Wine description
Extended wood maturation resulted in a beautiful amber colour with orange zest, dried fruit, caramel and nuttiness on the nose. This full
flavoured wine explodes with fruit, marzipan and toffee on the palate, with a well-balanced sweetness.
Serving suggestion
Serve chilled before a meal or with cheese and chocolates after a meal.
