100% Sauvignon
With its frank attack, this refreshing wine on the palate reveals a fruity length on the finish.
Wonderful as an aperitif, also with hors d'oeuvres or the fish of your choice.

Chardonnay is an international wine.
We used a single grape variety and we will get a fresh and aromatic wine with good body and structured.
Vinification of the grapes from the new vines grown on trellises in Loreto, planted in 2011, started in 2014.
These grapes are fragrant and undergo gentle pressing.
The must goes into cryomaceration and then into temperature controlled fermentation.
The wine ages in stainless steel vats until February or March and then bottled.
Some notes: bright straw yellow. Elegant hints of tropical fruit. In the mouth it’s full and fresh. Goes well with spaghetti with pachino tomatoes and shrimps.

ORIGIN: the wine is named after the grape variety which has been growing on the Berici Hills for more than 100 years

GRAPE VARIETY: 100% Merlot
PRODUCTION AREA: on the upper and lower slopes of the Berici Hills, in the areas of Lonigo and Alonte
SOIL TYPE: in a clay and limestone soil.
AVERAGE VINE AGE: 18 years
TRAINING METHOD: Guyot
TIME OF HARVESTING: mid September
WINEMAKING PROCESS: fermentation on the skins for about 5-7 days in stainless steel vats at a thermostatically controlled temperature of 23° C/73.4° F.
ALCOHOL CONTENT: 12 % vol.
TOTAL ACIDITY: 5 g/L
TASTING NOTES: bright ruby-red color. Fruity nose of ripe red berries. Soft on the palate, elegant and well balanced, with a complex structure.
SERVING TEMPERATURE: 14-16°C/57.2-60.8°F
SERVING SUGGESTIONS: perfect with oven-cooked first courses with meat sauce, and main dishes such as pork, roasts and rabbit.

Grape Varieties:
Grenache (60%) and Syrah (40%), with an average vine age of 46 years.
Village:
Saint Marcel d’Ardeche, 45 miles northwest of Avignon. The area is rich with ancient ruins, including vestiges of a Roman outpost. The vineyard once served as a Roman military outpost.
Soil:
Drift boulders of limestone, for the first 2 meters over granite and alluvial clay.
Vinification:
Integrated farming, with hand harvesting, organic herbicides use, no pesticides and the utilization of sustainable agriculture which respects the
environment established by the Forum de l'Agriculture Raisonnée Respecteuse l'Environnement. Three passes in the vineyard, for only,
unbroken healthy grapes. Grenache and Syrah are de-stemmed entirely. Fermentation at 45 °F for a duration of 21 days, without oak.
Tasting Notes:
“Lightly dusty-edged black cherry and black currant fruit is lined with a graphite note. A hint of lavender chimes in on the finish.”

Chocolate Pairing Wine Tasting Friday, March 22, 2019 07:00 PM - 08:30 PM
In this Fun Event we will be tasting a total of 4 wines: 1 - White Wine 1 - Red Wine 1 - Sparkling or Naturally Sparkling 1 - Dessert Wine
Each wine being served will be paired with select handmade grand gourmet truffles. With the right combination, both the chocolate and wine tastes are elevated to a whole new level of gastronomic pleasure.
This event requires pre-registration and cost $20.00 per person at the door.
Our Truffle is a chocolate center with either one or two coatings of chocolate and we have developed recipes for a velvet-soft, smooth center, without the course, grainy mouth-feel. The centers are made of chocolate liquor, real butter, and fresh whipping cream. Each center is hand-formed and hand-dipped in coatings of chocolate, and then personally signed or decorated by the dipper, to identify the piece. Our grand truffle is usually identifiable by its size, each piece weighing approximately 1.5 oz.
Registration is mandatory to secure seats. These events requires pre-registration and cost $20.00 per person at the door. Pre-purchase tickets up to 24 hours prior to the event and save 25%, only $15.00 per person.
