Tasting Selections:
If your only exposure to Frascati has been the tepid, metallic versions off of the grocery shelves, you are in for a nice surprise.
Monte Porzio Frascati is straw in color and its aromas of fresh fruit give a burst of fresh fruit on the palette with a lingering almond finish that is clean and harmonious.
The wine is a blend of two grape varietals, Malvasia and Trebbiano, and is bottled in the traditional Estrucan bottle for over 750 years.
It goes with dishes of pasta and risotto, fresh cheeses or seasoned type precorino cheese. Also with fish white meats and fish.

Chardonnay is an international wine.
We used a single grape variety and we will get a fresh and aromatic wine with good body and structured.
Vinification of the grapes from the new vines grown on trellises in Loreto, planted in 2011, started in 2014.
These grapes are fragrant and undergo gentle pressing.
The must goes into cryomaceration and then into temperature controlled fermentation.
The wine ages in stainless steel vats until February or March and then bottled.
Some notes: bright straw yellow. Elegant hints of tropical fruit. In the mouth it’s full and fresh. Goes well with spaghetti with pachino tomatoes and shrimps.

PRODUCTION
Production : 11.000 bottles
Wine-making : Direct press Rosé. Maceration with the skin during 6 hours in the press. Alcoholic fermentation in stainless steel tank during 30 days at low temperature (60ºF). Cold stabilization (40 ºF) during 15 days. Filtered and bottled on at the end of March 2014.
The wine has a light, attractive and delicate pink salmon color. Its nose is intense and complex with fresh plum and floral notes. Very refreshing in the mouth with a crisp natural acidity, tasty and with a long and delicate finish.

About the area
South Africa's vineyards are mostly situated in the Western Cape near the coast. This is the southernmost region of the African continent, and
has a Mediterranean type climate and diverse soils perfectly suited to quality grape production.
Winemaking
Specially selected grapes were harvested, destemmed and inoculated with yeast. The wine was allowed to ferment until the desired sugar level
was reached and then fortified with natural wine spirits to stop the fermentation. The resulting wine was then matured in French oak barrels.
Maturation
8 - 10 years in a combination of 300 litre and 500 litre French oak barrels.

Tinta Barocca + Cinsaut + Souzão.
Wine description
Extended wood maturation resulted in a beautiful amber colour with orange zest, dried fruit, caramel and nuttiness on the nose. This full
flavoured wine explodes with fruit, marzipan and toffee on the palate, with a well-balanced sweetness.
Serving suggestion
Serve chilled before a meal or with cheese and chocolates after a meal.

Groundhog Day Repeating Wine Tasting
Happy Groundhog Day...Happy Groundhog Day...Happy Groundhog Day... Opps, I'm Caught In a loop!
Just the classic movie Groundhog Day, we are going to be stuck in a loop during Wine Tasting saluting this fun holiday. We will be trying a special horizontal tastings of White, Red and Dessert Wines. Each wine category we will repeat the same grape varietal for a delicious horizontal tasting experience. Come see how the same grape can taste so different.

Golden yellow color.
Aromas of baked apples and ground cinnamon.
Medium bodied with a smooth finish and no oak flavor. Juicy.
Pair with grilled or roasted chicken, boiled lobster.

Vineyard:All fruit was sourced from our own vineyard – located within the coolest, westernmost reaches of the Casablanca Valley. Sourced from blocks planted on a mixture of grey clay and sandy/yellow clays with an average vine age of 16 to 20 years. Cropped at an average of 6 tonnes per hectare (2.4 tons per acre).
Harvest:The grapes were carefully machine harvested at night, with an ambient temperature of between 2 and 6°C (39 to 43ºF) between May 1st and May 4th, 2015.
Vinification:Upon arrival at the winery all grapes were first destemmed and crushed to stainless steel tanks (via a chiller in order to drop the temperature to 1ºC or 34ºF) where they were then left to cold soak for 168 hours (7 days). Following this time the free-run juice was drained by gravity from the tanks. The remaining skins and juice were then dug-out and gently squeezed using pneumatic presses in order to separate light from hard pressings. The resulting juices were then left to cold settle (at 10ºC/50ºF) for 4 days following which time the juice was racked to stainless steel tanks, inoculated with selected yeasts and gravity fed to a mixture of new (36%) and used (64%) French oak barrels. The juice was first inoculated with Torulaspora delbrueckii (a native yeast isolated from the vineyard) and then, 3-4 days later when fermentation had already begun, they were inoculated a second time with Saccharomyces cerevisiae. Temperatures during the fermentation in barrel peaked at 18ºC (or 65ºF). After fermentation had finished the barrels were sulphured at which point battonage (or manual lees stirring) was carried out weekly for the following 10 months. After a total of 11 months in barrel the wine was gently nitrogen racked to tank at which point it cold stabilised, filtered and bottled.
Tasting Notes:Pale straw in colour. On the nose elegant aromas of citrus rind and green pear combine effortlessly with almond and walnut notes. In the mouth flavours of crème brûlée and cookie-dough give way to a fresh, lively acidity which imparts excellent structure and length.

A beautiful aroma of blackberry, currants, herbs and spices with toasted oak notes marry well for a great overall impression.
This is a wine of depth and rich full-bodied flavors.
Great with hard cheeses, roasts, steaks and grilled mushrooms.

Aromas of currant, plum, chocolate and meat. Soft, intense and varietally precise, with good energy for the flavors of currant, plum, tobacco and earth.
It ends with sweet, slightly dusty tannins, a cherry note and solid structure.
