Vinification:
The grapes were hand picked at optimum ripeness at the end of September. The grapes come from several vineyards and selected in the cellar.
The bunches are pressed whole, the juice is then fermented slowly in temperature controlled stainless steel tanks.
The wine is bottled young in order to preserve the natural fruity flavors and the freshness from the grapes.

Intense aroma with slight hints of nutmeg, peach, and acacia.
A dry, fresh wine with strong, fruity overtones and orange peel. It has a rich, persistent flavor.
Is best served with seafood dishes.

"Hereford" breed of great strain, such as the Cabernet Sauvignon variety that gives rise to this kind wine.Deep ruby red color, with distant violet nuances and fruity aromas reminiscent of the cassis and the cherry in a pleasant communion with vanilla and toast, the product of its oak aging.

Shiraz
We'd like to clear this up once and for all: the Shiraz grape is genetically identical to Syrah. Australian winemakers put "Shiraz" on the map (and, many would argue, vice versa), and the term is now used throughout much of the New World. Let it never be said, however, that Shiraz and Syrah are the same thing: the region in which the grape is grown determines much about the flavor of the wine it will produce. Typically, New World Shiraz yields bigger, fruitier wines than the the peppery Syrahs produced in the cool climates of the Rhône Valley.

Sangue di Giuda translates to Blood of Judah. This wonderful sparkling red wine is sinfully sweet!
This naturally sparkling wine has an intense crimson-red color and produced from a combination of Croatina (60%), Barbera (20%), Ughetta (10%), Uva rara (10%) (autochthonous grape varieties). It contains a very fruity fragrance that includes crushed berries, dark plums and black cherries. The wine has good acidity, which balances its sweetness. It has a delicate, fresh, and fruity taste that is best enjoyed while the wine is young.
Exceptional with fruit tarts, almond desserts and fine pastries.

Domaine de La Fontaine has been passed down from father to son for 5 generations – over 100 years – as has the knowledge & passion for their soil & their wines.
The property is on difficult clay soils in the Fins Bois region of the Cognac Appellation.
A dessert or aperitif wine, made from a blend of lightly-fermented grape must and Cognac. In 1589, a wine maker accidentally added grape must into a barrel that he believed was empty but in fact contained cognac. Two years later it was unearthed and hence Pineau was born. The resulting drink is between 16 and 22% ABV. Pineau des Charentes should be served chilled (8-10°C) in a tulip-shaped glass such as a sherry glass. The taper of this type of glass better enhances the aroma of the wine. Pineau des Charentes does not benefit from ageing. However, storing unopened bottles away from sources of light will do no harm to the wine, although bottles should be stored upright to reduce the exposed surface area. Once opened, Pineau des Charentes will keep for some time in the fridge.
Rosé Pineau:
A result of blends of several Pineau’s ranging from 3 to 5 years; this pineau is made with Merlot a grape which provides the fruit & freshness.
Serving Hints:
Pineau should be drunk slightly chilled after meals.
