Tasting Selections:
If your only exposure to Frascati has been the tepid, metallic versions off of the grocery shelves, you are in for a nice surprise.
Monte Porzio Frascati is straw in color and its aromas of fresh fruit give a burst of fresh fruit on the palette with a lingering almond finish that is clean and harmonious.
The wine is a blend of two grape varietals, Malvasia and Trebbiano, and is bottled in the traditional Estrucan bottle for over 750 years.
It goes with dishes of pasta and risotto, fresh cheeses or seasoned type precorino cheese. Also with fish white meats and fish.

Chardonnay is an international wine.
We used a single grape variety and we will get a fresh and aromatic wine with good body and structured.
Vinification of the grapes from the new vines grown on trellises in Loreto, planted in 2011, started in 2014.
These grapes are fragrant and undergo gentle pressing.
The must goes into cryomaceration and then into temperature controlled fermentation.
The wine ages in stainless steel vats until February or March and then bottled.
Some notes: bright straw yellow. Elegant hints of tropical fruit. In the mouth it’s full and fresh. Goes well with spaghetti with pachino tomatoes and shrimps.

REGION & SOIL
The Anjou wines, celebrated by the poets of La Pléiade, were famous well before the XVIth century. Indeed, in the VIth century, Appolinius already praised the city of Angers that ' Bacchus gratified with its gifts ‘!
This popularity has maintained till today. The Anjou wines are very varied, whether white or red, dry or sweet, sparkling, syrupy, etc.
The Anjou area is not a ' natural ' region. It is the meeting point of very distinct lands: the Massif Vendéen and the Massif Armoricain, the strait of Poitou and Touraine. The soils are thus very varied as well. You find shale, chalk, sandstone, sand, and clay; but the chalk called ' tuffeau ', the clay sand and the siliceous stone predominate.
Under a deep blue sky, the climate softened by the light mist coming from the ocean, is very mild in winter (the famous Anjou gentle way of life) and experiences an early spring.
VARIETAL
Our wine is a blending of Cabernet Franc and Grolleau.
The Cabernet provides the rosé wine with its structure. The Grolleau (or Groslot) is recommended for rosés wines, to which it provides its spirit and merriness. It is this grape variety, whose leaves redden in autumn, which gives a very special radiance to the Anjou slopes after the picking.
VINIFICATION
The grapes are pressed right after being picked and only the first pressing, having more condensed aromas, is selected with the ' juice of the drop '.
Stored in vats, this wine is kept fermenting, without the skin, at low temperatures (14/15°C).
It is bottled right at the beginning of spring so as to keep its freshness and bouquet.
TASTE & APPEARANCE
A pale pink colour, slightly salmon and translucent, seduces the eye.
Semi-sweet, light in alcohol, very aromatic with red fruit smells, it is a 'summer wine ' par excellence.
SUGGESTIONS
Serve it chilly at about 8°C. Perfect with poultry and white meat, it skillfully goes with all spring and summer meals. You can also appreciate it during hot sunny summer afternoons.

Viticulture
Vineyard: Selected from vineyards in Burgenland.
Soil Type: One part comes from gravel soil, the other part from loamy soils.
Vine Age: 20 years old average.
Irrigation: No irrigation
Harvest Date: October 2014.
Yield: 8 t/ha.
Vinification:
A cold and rainy year especially during harvest. It was much colder than average, which led to producing straight, focused with good acidity and low alcohol levels wines.
This particular vintage provides physiological ripeness with low alcohol and a good acid backbone. Typical for a Blaufränkisch from Burgenland. Harvested at optimum ripeness, spontaneous fermentation in temperature controlled tanks, pressed and aged a bit in large, used oak barrels. Bottled young to preserve the freshness from the fruits.
Tasting Notes:
Color: Light ruby.
Nose: Some blueberry and spice.
Palate: Fresh, dark ripe cherries, with blueberries and a velvety finish. Fine tannins, well integrated acidity and good length.
Other: Will pair well with roasted chicken or grilled meat.

Is a system of product certification and regulation that aims to ensure that the workers throughout the chain of production receive fair treatment with respect of wages, working conditions and participation. Fair Trade addresses injustices of conventional trade, which traditionally discriminates against the poorest, weakest producers. Six Hats success has allowed the building of a community hall, creating a farm crèche and pre-school, purchasing sport equipment for the community, improving the housing on the farm as well as providing education bursaries and school fees for further education.
Vinification
Grapes were handpicked and cold soaked for 24 hours to obtain the desired color and flavor, fermentation is started with selected yeasts strains under controlled conditions at 26 °C. Malolactic fermentation also took place in tank and was matured for six months on French and American oak staves.
Origin & Climate
Citrusdal is situated about 170km north of Cape Town, in the heart of the citrus growing region of South Africa, also known as the getaway to the Cederberg, the floral splendor of Namaqualand. The soil is mainly made of Koffieklip & Oak Leaf. Vineyards are located high up in the Cederberg and Piekenierskloof Mountains, where the climate tends to be cooler with a longer ripening season; cold winters, often with snow and temperate summers.
Tasting Notes
Bright red, with aromas of red fruit, spice & Christmas cake. A medium bodied wine with an intense red color and typical aromas of ripe strawberries and plums. Well balanced with soft oak and vanilla. Will be a good match with lamb curry or any dish with some spice.

In order to establish this mead the traditional brew is combined with various spices and dried hibiscus. In addition to the color, this adds a floral aroma and aftertaste, like good Madeira.

Tasting Selections:
The grapes were crushed, pressed and the juice was cold settled. The wine was all fermented in stainless steel tanks at low temperature to preserve the fruit aromas. After fermentation, the wine was allowed to settle in the tanks over the Winter before blending and filtration.
This Riesling displays wonderful characteristics of steely acidic backbone, floral elements and pear/apple notes. The full-mouth feel of this wine makes it perfect for BBQ foods and serves well as an afternoon sipping wine.

This wine is produced in eastern Veneto using 100% Pinot Grigio grapes. The grapes are harvested by hand in the early morning hours of the day. They then go through a soft pressing and are fermented with selected yeasts at a controlled temperature of 59-64 degrees F. The wine is aged in stainless steel tanks for 3-5 months and then in bottles for another 2-3 months.
This wine has a strong straw yellow color with an intense aroma and notes of nutmeg, peach, ripened apple and citrus. It has a dry and elegant taste, with strong hints of orange peel. It is remarkably sapid, long and harmonic.
Pair with veal, shellfish, poultry.

Carrau Tannats were the pioneer in reaching outstanding special reserve reds starting in 1979, with a new style for the Uruguayan and export markets.
The typical red of Uruguay is vinificated here with very mature fruit that results in soft and elegant tannins for a full body wine. It is 100% Tannat varietal handpicked from the Las Violetas region where maritime conditions are influenced by the River Plate and Atlantic Ocean.
It has a Red ruby color with a deep intensity.
This wine offers you a bouquet of classic cedar and red fruits in the nose.
The quest for harmony and balance with oak shows the Tannat character very well. Plums are evident on the palate, roundness, and smooth tannins contribute for an excellent red wine with a persistent nice finish on the palate.
It is an ideal wine to serve with red meat, aged cheeses, and grilled foods. It could age well for 5 or more years with good cellar conditions.

A classic style, with notes of cigar box spice, cassis, plum, red fruits and smoke.
It is a medium bodied, rich, rounded and complex wine and can age for up to 10 years.

We will be celebrating our spirit friends this Halloween season with our Annual Ghostly Gala with extended hours. We have experienced a ghostly presence at a couple of our wine tastings and by the staff on regular occasions, perhaps our spirit friend will make himself know to us again at our Gala. We will try to reach out to the spirits using a EMF tool to communicate with a group at the wine table starting at 8:45pm after last call.
