cla colecccion 2011

VINEYARDS:

Total area : 65 hectares

Area in production : 55 hectares

Altitude : 1000 meters above sea level

Plantation density : 5.500 plants per hectare

Yield : 5.000 a 6.000 kgs. per hectare

Harvest : Manual in 12 kgs boxes.

VARIETAL COMPOSITION : 58% Malbec ; 18% Cabernet Sauvignon ; 12% Petit Verdot; 8% Syrah; 4% Merlot

Vintage : 2011

Alcohol : 15%

Acidity : 5.8 g/l

Residual Sugar : 1.7 g/l

Ph : 3.85

Dry Extract : 32.5 g/l

PRODUCTION :

42.000 bottles

Fermentation :

Maceration:

7 to 10 days at 28ºC in stainless steel tanks. Once the vats are full, the grapes undergo a maceration

before the alcoholic fermentation takes place. This process takes 30 to 40 days.

Malolactic Fermentation: 100%

Aging : 60% in French oak barrels during 12 months.

TASTING NOTES :

“For a cool vintage with plenty of challenges, the wine reached 15% alcohol, so don’t expect any green aromas or diluted flavors here. The nose is a powerful combination of dark plums, espresso coffee, Belgian chocolate and shy hints of red cherries with a full-bodied palate and abundant, fine-grained tannins, moderate acidity and good length, no doubt lifted by the alcohol. This is a big, ripe blend, slightly international, in need of some bottle aging. 42,000 bottles were produced in 2011. Drink 2015-2021.” (91 pts, Wine Spectator, 04/2014). LuisGutierrez.

Reymos Espumoso de Moscatel - Spain - $17.95

reymos

Pale with hints of green, clean and bright with fine, persistent bubbles. Rich in elegant aromas characteristic of the variety. Characteristic taste does not conform to the traditional perception of sparkling wine. Its high content in natural sugars produces a feeling of fullness in the mouth. The finish is persistent, sweet and very pleasant. Light due to its low alcohol content, smooth foam.

 Bonus Taste:

La Fontaine Pineau Des Charentes Blanc - France - $32.50

pineau blanc-produit11Domaine de La Fontaine has been passed down from father to son for 5 generations – over 100 years – as has the knowledge & passion for their soil & their wines.

The property is on difficult clay soils in the Fins Bois region of the Cognac Appellation.

A dessert or aperitif wine, made from a blend of lightly-fermented grape must and Cognac. In 1589, a wine maker accidentally added grape must into a barrel that he believed was empty but in fact contained cognac. Two years later it was unearthed and hence Pineau was born. The resulting drink is between 16 and 22% ABV. Pineau des Charentes should be served chilled (8-10°C) in a tulip-shaped glass such as a sherry glass. The taper of this type of glass better enhances the aroma of the wine. Pineau des Charentes does not benefit from ageing. However, storing unopened bottles away from sources of light will do no harm to the wine, although bottles should be stored upright to reduce the exposed surface area. Once opened, Pineau des Charentes will keep for some time in the fridge.

White Pineau:

A result of blends of several Pineau's ranging from 3 to 5 years old. It is made from "Ugni Blanc" grapes which are also used to make Cognac.

Serving Hints:

Pineau should be drunk slightly chilled after meals.
