TOTAL ACIDITY: 5.7 g/L
TASTING NOTES: pale straw yellow color, delicate fruity nose, fresh and persistent on the palate.

It is located at Sauveterre de Guyenne, the center of Entre-Deux-Mers, 35 km from Saint-Emilion et 45 km from Bordeaux.
It is a family-owned vineyard and has been gone through 8 generations.

Dark cherry red in color; full of pleasant aromas of very ripe fruits; balanced and round in palate; very solid structure. To taste at around 15°C.

Vinification:
The grapes were hand picked at optimum ripeness at the end of September. The grapes come from several vineyards and selected in the cellar.
The bunches are pressed whole, the juice is then fermented slowly in temperature controlled stainless steel tanks.
The wine is bottled young in order to preserve the natural fruity flavors and the freshness from the grapes.

Vineyard:
All fruit was sourced from our own vineyard – located within the coolest, westernmost reaches of the Casablanca Valley. Sourced from a hillside block facing north-east, planted in 2006 on red clay soil derived from granite. Plant material is a massal selection, low in vigour and long established in Chile under the name of “Valdivieso clone.” Crop levels are an average of 3.5 tonnes per hectare (1.7 tons per acre).
Harvest:
After a dry and relatively warm growing season, harvest was carried out by hand in 12kg picking cases during the week of 20th April 2015.
Vinification:
Destemming (without crushing) and an individual berry selection before being gravity fed to a small open-top tank. A 5-day cold soak (at 5ºC/41ºF) ensued after which time the must was warmed and inoculated with selected yeasts and fermented during 6 days with temperatures peaking at 32ºC/90ºF. During fermentation the vats were hand-plunged twice daily in order to extract the ideal amount of tannin and colour. Following the completion of fermentation, the young wine was then drained to a mixture of new (35%) and second and third use (65%) French oak barrels for 18 months during which time it was racked twice: once in the spring (upon the completion of malolactic fermentation) and then once again shortly before bottling in October 2016.
After bottling the finished wine was aged for at least three months in our cellar prior to release.
Tasting Notes:
Rather deep colour for a Pinot Noir. On the nose the oak is still rather prominent, but gradually notes of ripe red and black forest fruits appear. Medium bodied, with plush mouthfeel. The elegant tannins reappear on the finish. The wine will benefit from careful ageing, or decanting after opening. Preferably serve at 12 – 14ºC.

Village:
Saint Marcel d’Ardeche, 45 miles northwest of Avignon. The area is rich with ancient ruins, including vestiges of a Roman outpost. The vineyard once served as a Roman military outpost.
Soil:
Drift boulders of limestone, for the first 2 meters over granite and alluvial clay.
Vinification:
Integrated farming, with hand harvesting, organic herbicides use, no pesticides and the utilization of sustainable agriculture which respects the
environment established by the Forum de l'Agriculture Raisonnée Respecteuse l'Environnement. Three passes in the vineyard, for only,
unbroken healthy grapes. Grenache and Syrah are de-stemmed entirely. Fermentation at 45 °F for a duration of 21 days, without oak.
Tasting Notes:
“Lightly dusty-edged black cherry and black currant fruit is lined with a graphite note. A hint of lavender chimes in on the finish.”

Purple color; spice box, violets, black currant; layered fruit, smooth texture, will evolve.
Notes: Elegant, refined, complex and well balanced.
Color: Shady cherry red, with ciolaceous tints.
Aroma: Intense, spicy, with touches of black pepper.
Flavour: Spicy, profound and unctuous with persistent tannin. Long and important end in mouth.

Bonus Taste:
In order to establish this mead the traditional brew is combined with various spices and dried hibiscus. In addition to the color, this adds a floral aroma and aftertaste, like good Madeira.
